We founded the Chleba se soli ('Bread with Salt') bakery together with a family of bakers and confectioners. The main idea was to create a place where bread is baked the way it should be. What does it mean? Bread made only from the essentials – flour, water, and salt. Nothing more, nothing less. The water comes from the Novohradske Mountains, and the organic grain is of Czech origin. The bakery uses only untreated, natural ingredients wherever possible. Its social mission is to support inclusion by creating jobs for people from the local area who face health, social, or employment disadvantages. Today, there are four Chleba se soli bakeries: one in Včelná, another in the center of Czech Budweis, a third on Novohradská Street in the same city, and finally, the main base in Kaplice. When it came to designing the interior, it was important for us to highlight and honor the slow processes, original recipes, and craftsmanship behind the baking.
We aimed to evoke the feeling of visiting a grandmother’s home – sitting at a wooden table, sharing a slice of leavened plum cake. The space breathes tradition, calm, small-town life, and, of course, the unmistakable essence of South Bohemia. Chleba se soli seeks to serve the needs of the local community first and foremost. That’s why we placed a large wooden table surrounded by TON chairs in the center of the shop, with comfortable Czech armchairs by the renowned designer Jiří Jiroutek along the walls. This was a deliberate gesture to invite locals to meet, talk, and feel at home. The interior was created as a low-budget project. Everything was made by hand, from the wooden floors and paneling to the concrete counter with its unique patina, formed by recycled fabrics, and the woven light fixture floating above the shop. Guests can even peek directly into the bakery’s production area. We believe that if you ever pass by, you’ll stop in.
